Brookgreen Gardens

I’ve been writing this blog about two months now and I’m finding myself gravitating toward writing about the outdoors; flower and veggie gardens, outdoor projects, places of beauty, etc.  Recently, I was questioning why I felt this pull.  As I was letting this sit with me over a few week period, on vacation I finally picked up the book A New Earth by Eckhart Tolle.  Yes, I’m a few years behind on my reading but all you parents with young kids can relate, right?  I was on page 3 and I ran across this sentence:

Using the word “enlightenment” in a wider sense than the conventionally accepted one, we could look upon flowers as the enlightenment of plants.

“…flowers as the enlightenment of plants.”  Anyone else have a visceral reaction to this?  Plants produce beautiful, fragrant miracles.  Those miracles make me smile and feel connected to the Earth every day.  It’s the small things in life I stop for and have come to appreciate and treasure with age.

Today, I’ll be sharing some images from Brookgreen Gardens, one of our stops on our vacation in South Carolina.  Brookgreen Gardens is a National Historic Landmark, founded in 1931 by Archer and Anna Hyatt Huntington.  According to their website, Brookgreen Gardens displays the most significant collection of figurative sculpture in an outdoor setting by American artists in the world.  I’d have to agree!  It was acres and acres of pure beauty!!

Incredible, don’t you think?  I’m pretty sure I captured only about 1/16th of the grounds.  My favorite area was the children’s garden.  It was playful and fun; meant for kids to explore and play hide and seek in the nooks and cranny’s.   Taking it in as a whole, it really was absolutely breathtaking.  Truly one of the most beautiful places I’ve been!  If you ever find yourself in South Carolina, Brookgreen Gardens is a must visit!

Summer Squash Herb Delight

When I came back from vacation I couldn’t believe how huge everything in the garden had become.  It’s churning out loads of fruits, veggies, and herbs right now.  I also couldn’t help but notice the 18″ long squash bossing my tomatoes around so I had to do something about it!

Yep, off the plant it came and into the kitchen to (hopefully) be enjoyed.  Now, I’m not a huge fan of squash, not even a mediocre fan, but I decided to expand my horizons and grow some this year.  I must say, after throwing together this recipe I’m pretty sure I’m a fan now!  It’s quite tasty!

Squash, onion, and garlic sauteing.  I decided to quarter the squash because it was so large.

The crab and white wine completed what was a nice, light, and lovely summer meal!
